A Year With PW: Twice Baked Potatoes, Cheese Grits, and Biscuits.

Well, just from the title of the post you can tell we're eating SUPER healthy this week, huh? Ha! We used Pioneer Woman recipes in two meals this week and they were all pretty good!

The first night we had steak, green beans, and PW's Twice Baked Potatoes. Oh my. These were delicious. {James hated them. He hates potatoes. How can he really be my child?} I was concerned that they'd be difficult to make but they were easy and pretty quick! I baked the potatoes {and I didn't use canola oil like she calls for - I only had EVOO} and then just cut them in half and scooped out the middles with an ice cream scoop. Stir in the other ingredients, refill, and bake for a bit longer. Yum! Will DEVOURED them.



Last night we had breakfast for dinner and I made PW's Cheese Grits, PW's biscuits, bacon, and eggs. {I cannot for the life of me get scrambled eggs right. Eddie knows it. Last night he worked in the yard, came in and showered, and then made the eggs right before it was time to eat. Ha! I think I stir them too much.} 

The cheese grits {I halved the recipe and we have so much left over!} were DELICIOUS - to me. {I can't find her exact recipe online, but here's the link to another cheese grits recipe. I just don't think you can go wrong with grits.} They called for garlic and Eddie isn't a fan of garlic like I am. They're actually found in the dinner section of the cookbook so they'd be great with fish or shrimp or something for supper - and I still liked them for a breakfast meal - but Eddie suggested I cut back the garlic if I make them again. 

The biscuits were good, but not great to me. {Again, not the exact recipe, but close enough!} First of all, make sure you have enough flour so you don't have to fun to the store in the middle of cooking supper *ahem*. The biscuits were not as light and fluffy as I prefer. I had a little helper who squished the dough down a bit so that may have been the reason. They were good - don't get me wrong - they just weren't my "perfect" biscuits.



So there you go! Three more PW recipes. I have a long way to go to completing the book, but I'm enjoying trying!

mmmmm. twice baked potatoes sound delicious. do you know about my love for potatoes?? i eat them raw. YUM and can we still be friends or are you too grossed out!?
