Chicken Noodle Soup...

To say that I'm overwhelmed by our news from yesterday about James' allergy is probably the understatement of the year. Eddie made me get off the computer last night so I'd stop freaking myself out. BUT DO YOU KNOW THAT TREE NUTS ARE IN THE MOST UNUSUAL THINGS?!?! *Sigh* We'll learn. The most disheartening part is that when I dropped him off at school this morning I told his teacher that he has an Epi Pen in his bag now and she said "I don't know what that is," and blew it off. Awesome. Thanks for taking care of my kid. (We've been less-than-impressed with her this year. Not just for this.) *Sigh again.*

So, today I'm trying NOT to focus solely on allergies! :)

I made this chicken noodle soup on Monday night. I had chicken noodle soup on the brain since I'd been sick all weekend and Eddie agreed to have it for supper. It's a Cooking Light recipe that my friend, Callie, tweeted to me and then I changed it up for what I wanted. I'm just giving my version, but you can probably find the original on Cooking Light's website.

Ingredients:
* 8 cups chicken stock or broth (I used broth and added a little extra)
* rotisserie chicken (I picked ALL of the white meat off and added a little of the dark meat but not much. The recipe called for 20 oz. of chicken.)
* 2 cups diagonally sliced carrots
* 2 cups diagonally sliced celery
* 1 cup chopped onion
* 6 oz. medium egg noodles

1. Bring broth to a boil. Turn down to low and add all vegetables. Cook 10 minutes or until tender.
2. Add chicken.
3. Add egg noodles and cook until tender. (This is where I would change it for next time. Cook and store your egg noodles SEPARATELY. Otherwise, they get gummy and you'll regret having leftovers. Or maybe that's just me.)
Serve with bread. (And the rest of the rotisserie chicken if your name is Eddie!)

We enjoyed it! It was super easy and quick!

Bless your heart! I heard that those Epi Pens are expensive and have expiration dates, so if you don't have to use it, it still goes out of date and you have to dispose of them! That makes sense, but still stinks! Hopefully he won't ever have to use it!
Nuts are in everything, candy, sweets, and just used for flavor in a bunch of things, but since he's young, he'll always be used to checking things for nuts and never know what he's missing!

His teacher is making me mad...and think of it this way - the allergy sucks and may be crazy learning it all, but in the last few months he has eaten well and hasnt had any problems, so maybe you can just keep doing what you have been doing while you learn about stuff. Let me know if I can help :/
