Recipe of the Week: Zucchini Saute'

This recipe is from Trisha and Gwen Yearwood and Beth Bernard's cookbook. It's a great cookbook and I use it ALL the time. I love it. Their new one is coming out in April and I can't wait to get my hands on it!


1 tbsp. olive oil

1/2 tsp. minced garlic

4 zucchini, thinly sliced

1/2 tsp. salt

1/4 tsp. pepper

1/4 c. grated parmesan

1. Heat olive oil over medium heat.

2. When hot, add the garlic and saute' for 2 minutes.

3. Add the zucchini, salt, pepper, and cook until zucchini is tender but still a little bit crisp, about 5 minutes.

4. Transfer zucchini to dish and sprinkle with parmesan cheese.
