Three new recipes for today! Friday is Kelly's "Show Us Where You Live" blog party about desserts and I chose my three favorites that I make over and over! Hopefully I haven't shared these before.
Bessie's Key Lime Pie
Ingredients:
4 limes
1 cup Cool Whip
1 can sweetened condensed milk
graham cracker pie crust
1. Wash off limes, grate 1 tsp. of zest with a grater. Cut limes in half and squeeze 1/2 cup of juice (that would be a LOT easier if I could find my JUICER!). Combine juice, zest, and condensed milk and whisk.
2. Fold in 1 cup Cool Whip (microwave it 5-10 seconds if it's frozen).
3. Pour all into pie crust and freeze 4 hours.
Chocolate Peanut Butter Bars
Ingredients:
1 cup creamy peanut butter
1.25 cups sugar
1 tsp. vanilla
1/4 tsp. salt
6 tbsp. butter, softened (obviously, this is extremely low fat)
3 eggs
1 cup flour
2 cups chocolate chips
1. Preheat oven to 350*.
2. In large mixing bowl, beat peanut butter and butter until smooth.
3. Add sugar, eggs, and vanilla and beat until creamy.
4. Blend in flour and salt.
5. Stir in 1 cup chocolate chips.
6. Spread into 13x9 inch pan. Bake 25-30 minutes.
7. Immediately sprinkle remaining morsels over cook layer. Let stand 5 minutes or until morsels become shiny and soft. Spread evenly over top and cool completely!
Laura's Pumpkin Bread
Ingredients:
12 oz. pumpkin
1 bag chocolate chips
2 cups all-purpose flour
2 cups sugar
2 tsp. baking soda
1 tsp. cinnamon
1.5 tsp. pumpkin spice
1 tsp. salt
4 eggs
1 cup oil
1. In large bowl, sift dry ingredients together.
2. In mixing bowl, mix wet ingredients together.
3. Pour dry ingredients into wet ingredients and mix approximately 4 minutes.
4. Pour into greased and floured 13x9x2 inch pan or muffin tins.
5. Bake at 350* - approximately 35 minutes for cake, 18 minutes for muffins.
