Taco Soup

It is COLD in Georgia today. And I am LOVING it. I am not a hot weather girl at all, so I eat it up when it's really winter. I prefer spring and fall, but I would MUCH rather have this cold than the 100* days I know are coming in six months. While it's cold outside I'm making all the soup I can! Tonight's soup is Taco Soup which is usually a crowd pleaser {not including our no-beans eater...}.

Ingredients:
* 1 lb ground beef
* diced onion
* 1 packet of taco seasoning
* 1 packet of ranch
* 1 can of Rotel
* 2-3 cans of beans - we picked Kidney, Pinto, and Black tonight
* 1 can of corn

Brown ground and onions in a dutch oven. Drain. Add meat, ranch, and taco seasoning back to pot and mix. Add in all cans of vegetables undrained. Heat to simmer and cook 1 hour. Serve over rice or with Fritos or cheese quesadillas. Top with cheese and sour cream!
