I have a fantastic pumpkin muffin recipe that I've used for several years and shared here before. It is excellent, but it's a lot of measuring and in our small temporary house kitchen it seemed daunting. I've seen the three ingredient pumpkin muffins pinned over and over and over on Pinterest so I decided to try some this weekend. The verdict is that they are SO simple and very good, but they probably still don't beat my "real" pumpkin muffins.
Ingredients:
Spice Cake or Pumpkin Cake Mix (I found one in the Halloween section of Target. It was a Pillsbury Pumpkin Cake Mix.)
1 can of pureed pumpkin
1/2 bag of chocolate chips (I used a whole bag...shockingly, it was too many.)
Mix first two ingredients together. Batter will be thick. Add chocolate chips in and stir. Scoop batter into lined muffin tins. I got 18 out of my batch. These do NOT rise at all so the amount you see before you bake is how full they'll be after! Bake 15-20 minutes at 350*. Cool and enjoy!
My favorite part of these was that my helper could EASILY do all of this without much fussing from his Type-A, Hates-A-Food-Mess Mama. ;)
