Recipe of the Week...Pork Chop Casserole

I didn't make a menu this week (mostly because Sunday was sort of busy) but I DID send the boys to the grocery store (best boys ever!) and we did eat supper each night. I guess that counts for something, right? In case you're wondering, we had spaghetti on Monday night, Pork Chop Casserole on Tuesday night, and Crockpot Chicken and Dumplings are on the menu tonight. We had leftovers last night because I wasn't feeling well!

The pork chops were FANTASTIC. I'd made this recipe before but it had been a long, long time.

Ingredients:
* Pork chops (I used four boneless)
* Red potatoes (I used Idaho...I feel a little like a rebel now)
* One packet of French Onion Soup Mix
* One can of Cream of Mushroom Soup (we're not fans, but it's all I had...I'll do it with cream-of-something-else next time so Eddie doesn't have to pick out all the teensy pieces of mushrooms)
* 1/2 cup of water

1. Place potatoes (VERY thinly chopped) into the bottom of a sprayed casserole dish. I used three potatoes. Word of caution. If using a mandolin slicer, be careful! :)
2. Place pork chops on top of potatoes.
3. Sprinkle packet of French Onion Soup over pork chops.
4. Mix can of Cream of Mushroom with 1/2 cup of water and mix. Pour mixture over top of pork chops.
5. Bake at 450* for 60 minutes while COVERED. Then uncover and bake an additional 10 minutes or until cooked thoroughly.

They were delicious!
