Anytime Eddie has to be gone late into the evening and I'm left to do bathtime and bedtime by myself, I have a newfound respect for single mamas. Because OHMYWORD at not having a break at all. If I had a hat on my head, I would tip it to you! Whew!
Obviously, Eddie was out late last night. He goes to United Methodist Men once a month and because it starts at 6:30 he just goes straight from work. James starts becoming a "pumpkin" at about 5pm every day so by about 5:05 I'm ready for some back-up. Yesterday wasn't all that bad (he was a decent boy!) but Eddie called at 6:30 and said he'd mis-read the bulletin and that because it was a District Rally, it wouldn't begin until 7pm. Again, Whew! I didn't mind because he needs to get out of the house as much as I do!
Before all of the "waiting on Eddie" began, I scrubbed and scrubbed our house. I've been in a little bit of a cooking/cleaning funk lately and our house had been neglected. So I spent the entire day yesterday (and probably today and tomorrow) cleaning, cleaning, cleaning. (Because, in case you aren't aware of it by now, THE PARTY is this weekend.) Someone (me) thought it would be a great time to switch out her (my) closet this week from spring/summer to fall/winter. Buh. I finally got it all organized, the warm weather clothes packed up, and the give-aways in a pile in the bedroom. Aside from that, I scrubbed our master tub, the shower, the toilet, the mirror, the sinks, and swept the floor. Boy, that's not much, Lauren. I beg to differ. With an almost-one-year old who doesn't want to stay put and a shower that hadn't been cleaned in, oh, longer than I care to say, it was a LOT. I was wiped out by the time Eddie got home.
I also went to the grocery store and made supper for myself last night. The supper was delicious, if I do say so myself. I'm going to share it in case someone else needs a new comfort food to make!
Chicken Tortellini Soup
Ingredients:
7 3/4 cups chicken broth (I found that a BIG box was about the right size)
1 (14.5 oz) can stewed tomatoes, chopped
1 (10 oz) pkg. frozen spinach, thawed
1/4 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp pepper
1 (9 oz) pkg refrigerated cheese tortellini
2 1/2 cups cooked chicken (I'm a fan of the rotesserie deli-kind that's already done for you!)
1. In a large pot combine broth, tomatoes, spinach, parmesan, salt, and pepper. Cook 10 min.
2. Add tortellini and chicken. Cook 5 min. or until tortellini is done.
I had mine with a grilled cheese and it was WONDERFUL. I'll probably have seconds for lunch today!
On an exciting note, a year ago tonight I went to the hospital to meet our boy! What a wonderful year it has been!!!

I am impressed! I NEVER get that much done during the day....it is next to impossible. I feel the same way when Jeffrey is working late or traveling. I am usually such a wimp and ask my mom to come over and help/spend the night. I don't know how single moms do it (especially working single moms at that!)
Can't wait to see pictures of the party - i know it is going to be precious!!
And....I switched out my closet, too, but dontcha just love these ridiculously hot temps we're STILL having??!?! ugh!
To clarify, I do NOT stay by myself. I won't tell you why. It creeps me out to think about the reason. I asked Eddie to get my clothes from the attic the first weekend in October and he told me he wouldn't because the forecast was upper 80s/low 90s that whole week. I'm ready for some COLD weather. And then I'll be begging for spring. I hate to be hot.
