Recipe of the Week: Pumpkin Cupcakes with Cinnamon Frosting


Pumpkin Cupcakes

Ingredients:
* 2 cups all-purpose flour
* 1 tsp. baking soda
* 1 tsp. baking powder
* 1 tsp. salt
* 1 cup granulated sugar
* 4 large eggs
* 1 cup packed light brown sugar
* 1 tsp. ground cinnamon
* 1 tsp. ground ginger
* 1/4 tsp. nutmeg
* 1/4 tsp. allspice
* 1 cup unsalted butter, melted and cooled
* 1 can (15 oz.) pumpkin
* 1 bag mini chocolate chips

1. Preheat oven to 350*.
2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice; set aside.
3. In a large bowl, whisk together brown sugar, granulated sugar, butter, and eggs. Add dry ingreditents and whisk until smooth. Whisk in pumpkin. Whisk in chocolate chips.
4. Fill muffin tins. Bake 20-25 minutes.
5. Ice with Cinnamon Frosting

Cinnamon Frosting

Ingredients:
* 2 sticks unsalted butter, cool
* 2 tbsp. cinnamon
* 2-3 cups powdered sugar
* 1 tsbp vanilla extract
* Milk

Mix butter until fluffy. Add cinnamon. Add 1/2 cup powdered sugar at a time. Add 1 tbsp vanilla extract. Add milk, 1 tbsp at a time until correct consistency.
