Crockpot Tortellini Soup!


The weather turned cooler overnight and it has been sort of rainy and dreary here all day so I announced before church this morning that we needed SOUP. James seconded that motion and requested potato soup. I obliged, but I also made another favorite: tortellini soup! It came together quickly this afternoon and I know I've shared it before, but it bears repeating. It was so yummy and the perfect Sunday night meal! (Better than cereal, right?!)

Ingredients:
Frozen tortellini (I think the bag I picked up was 32 oz. - it was BIG - if you want more soup, less pasta, go with the smaller one!)
2 cans Italian flavored diced tomatoes
24 ounces chicken broth
8 oz block of cream cheese
1 bag of spinach leaves
(Optional: Italian Sausage, sliced)

You can just throw everything into the crockpot and turn it on high! I normally hold my cream cheese out until toward the last 30 minutes or so, though. Cook for 3 hours. 

I didn't get a picture before the boys devoured this! Enjoy on a cool fall day!
