Chicken Tortilla Soup

Another day, another soup! I would eat soup every day and Eddie avoids it as much as possible! Ha! This one was quick to throw together and yummy. Make sure you have a little Cholula on hand to spice it up at the end. I didn't have any, sadly!!!


Ingredients:
1 pound chicken breasts
2 cans cream of chicken soup
1 cup salsa
1/2 bag of frozen corn
1 can black beans, drained and rinsed
1 teaspoon ground cumin
1/2 teaspoon dried cilantro

Spray crock pot with Pam and turn on low.
Add 1 pound of chicken breasts to crockpot.
Add other ingredients on top of chicken and cook on low 4-6 hours.
30 minutes before eating, shred chicken with a fork and add in cheddar cheese.
To serve, top with sour cream and crushed tortilla chips. We also like avocado on ours!
