We have kicked off fall around our house and (minus the heartbreakers by both Georgia AND Florida State today) have had a sweet, fun day!
The temperature dropped yesterday morning and it was cool and crisp when the sun wasn't out over the past 48 hours. It has been fabulous! When the weather starts to realize we're into fall then I break out all of my comfort food recipes. This one is NO exception. I love my mama's potato soup recipe because it's delicious, but when I want something quick and easy to make, I rely on this gem!
1 bag frozen hash browns
2 cans chicken broth
1 can cream of chicken soup
1 block of cream cheese, cubed
1/2 cup frozen diced onions
salt and pepper
Spray crockpot with Pam and add all ingredients EXCEPT cream cheese. Cover and cook on low 5-6 hours. Add cream cheese and recover, continuing to cook 30 minutes. Serve into bowls and top with sour cream, cheese, Cholula, bacon, etc. Enjoy!
