Hoppin' John

Hoppin' John has been one of our New Year's Day traditions for a few years. It's the only thing we make consistently. This year I couldn't find my cookbook with our favorite recipe in it so I scrambled. It turned out good so I want to keep it here so I'll have it when I need it next year!

In a crockpot, combine the following:

* 4-5 cans black eyed peas (drain half the liquid)
* 1 can mild Rotel
* 1 diced onion
* 2 pounds sausage
* 1 can beef broth

Cook on low for 6 hours. Serve over rice.
