What's for Dinner?

Sunday, June 26, 2011 - Monday, June 27, 2011:
Both are leftovers nights for us. On Sunday, we had a late lunch so we just sort of had a hodge-podge dinner. (Except for James who ate about 5 containers of baby food and yogurt before bed last night. He was starving!)

Tuesday, June 27, 2011:
Steak Kabobs (courtesy of this month's Southern Living!) (** the recipe makes 8 servings**)
Baked Potatoes

Ingredients:
2 lbs. top sirloin steak, trimmed.
1/2 large red onion, cut into fourths and separated into pieces.
1 pt. cherry tomatoes
8 (8-inch) metal skewers
Smoky Barbecue Rub
(the rub is 2 tbsp. firmly packed dark brown sugar, 2 tsp. garlic salt, 1 tsp. chipotle chile powder, 1/2 tsp. ground cumin, and 1/4 tsp. dried oregano.)

1. Preheat grill to 350* to 400* (medium-high) heat. Cut steak into 1-inch cubes. Thread steak, onion, and tomatoes alternately onto skewers, leaving 1/4-inch space between pices. (Sidenote, we usually do each type of food on a separate skewer.) Sprinkle kabobs with Smoky Barbecue Rub.
2. Grill kabobs, covered with grill lid, 4 to 5 minutes each side.
(**Another sidenote, it says to serve it with White Barbecue Sauce which is mayo based and wouldn't be eaten at our house. You're welcome to try it at yours! Ha!**)

Wednesday, June 28, 2011:
Tortellini-and-Tomato Salad (OR...Tortellini with Spaghetti Sauce if your name is Eddie or James) (Yes, I'm making two meals because I want to try this and the boys probably wouldn't like it.) (Also courtesy of this month's Southern Living.)

Ingredients:
2 (9-oz.) packages refrigerated cheese-filled tortellini
1/2 cup olive oil
1/2 cup freshly grated Parmesan cheese
3 tbsp. fresh lemon juice
2 garlic cloves
1 tsp. Worcestershire sauce
1/2 tsp. salt
2 cups baby heirloom tomatoes, halved
1 cup fresh corn kernels
1/2 cup coarsely chopped fresh basil
Salt and pepper

1. Prepare tortellini according to package directions.
2. Meanwhile, process olive oil and next five ingredients in a blender until smooth. Toss olive oil mixture with hot cooked tortellini, tomatoes, and next 2 ingredients. Season with salt and pepper to taste.
