I laughed out loud when I saw that I had a Potato Soup recipe request this week. Why, you ask? Because the first time I made Mama's Potato Soup, this happened. So you can see why a request for that recipe was funny to me. You know, since there's not really a recipe and all. I'll tell you how I make it but please don't be angry with me if it doesn't turn out just right. I would probably be better off just bringing you what's currently sitting on my stove.
Ingredients:
* 1 stick butter
* 1 white onion, diced
* self-rising flour
* 1 can chicken broth
* milk
* 6 potatoes, chopped
* cheese and sour cream to garnish
1. Cook onion and butter on medium low heat 10-15 minutes or until onion is soft.
2. Stir in flour. (I added approximately 1/4 cup) You'll have sort of a paste.
3. Add chicken broth (Mom uses less than a can. I use a whole can).
4. Add milk. (This is the super tricky part. To start, add as much as will thin your paste out a little. I continue to add milk later (because it will thicken as it cooks) to thin it out a little. This is sort of your own preference as well.
5. Stir in potatoes.
6. Cook until potatoes are done. Stir frequently!
A few notes:
Mine has been cooking for about an hour and the potatoes are not quite done. It will probably be finished in another 30-45 minutes.
I cook it as low as possible because it is BAD about sticking.
