Recipe of the Week...Pumpkin Spiced Cookies

I have totally fallen off the recipe wagon. I've been cooking (I cook something almost every night or pull something out of the freezer I've already cooked) but haven't cooked anything new lately. I posted this recipe last year but will be making them tomorrow for our Trunk-or-Treat on Sunday so I thought I'd share!

Ingredients:
* 2 1/4 cups all-purpose flour
* 1 1/2 teaspoons pumpkin pie spice
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup (2 sticks) butter or margarine, softened
* 1 cup granulated sugar
* 1 can (15 oz.) pumpkin
* 2 eggs
* 1 teaspoon vanilla extract
* 2 cups semi-sweet chocolate chips

1. Preheat oven to 375*.
2. Combine flour, pumpkin pie spice, baking powder, baking soda, and salt in a mixing bowl. In a separate bowl, beat butter and sugar until creamy. Beat in pumpkin, eggs, and vanilla. Gradually beat in flour mixture. Stir in chocolate chips. Drop by rounded spoonful onto greased baking sheets.
3. Bake for 15 to 20 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

*** You can ice cookies by mixing 1 cup powdered sugar with 1 to 1 1/2 tablespoons of milk and 1/2 teaspoon vanilla extract. ***
