Scrumptious Spinach Dip

I had the challenge of taking an appetizer to a get-together a few weeks ago. I say it was a challenge because I'm not an appetizer girl - I will almost always volunteer for a dessert. Do I love to eat appetizers? Yes! Do I ever have any idea what to take? No! So I went to Kelly's Korner Blog's Recipe page (if you haven't seen her blog, go visit immediately!) and stole this idea for a no-mayo spinach dip from her.

You'll need:
1 package of frozen spinach
8 oz. of cream cheese
8 oz. of Monterrey Jack cheese
6 oz. of Parmesan cheese
1 can Rotel

Cook the spinach according to the package directions.
I blot the spinach with paper towels afterward...I want SOME of the liquid, but not all of it.
Add in all three cheeses and melt in microwave 3-5 minutes.
Once the cheese is melty and liquidy, add in the Rotel and stir together.
Serve with Wheat Thins or other crackers.

Yum-O!

I realize that the Rotel sounds a little weird but it gives it a nice flavor.

I just made another batch because I've been thinking about it all week. It won't let you down. It's wonderful!
